White asparagus is a bud obtained by creating mounds of earth over the collars of the plants in the spring so as to make the buds grow longer and spears measuring about 20 to 25 cm to be obtained.

ASPARAGUS IN OIL AND SWEET-AND-SOUR ASPARAGUS
In order to preserve its special fragrance, asparagus is processed and packaged just a few hours after being harvested. In accordance with the traditional recipe, after being cleaned and washed the asparagus is placed in glass jars which are then filled with oil or with a solution based on water, wine vinegar, sugar, salt and spices, that is to say excluding the use of any preservatives or chemical additives whatsoever.
Lastly, each jar is sealed and then subjected to sanitizing heat treatment, so as to ensure a perfect hygiene standard.
This asparagus can then be recommended either as a simple starter or to accompany boiled meat or cold cuts, or as an ingredient for preparing tasty salads or appetizing cold rice dishes in the warmer seasons.
